Dancing Beer Can Chicken
INGREDIENTS:
| 1 4-5 lb / 2 kg Whole Chicken |
| 1 16 oz / 500 ml Can of Beer |
| Cooking Spray |
| RUB: |
| 1 1/2 tsp / 7 ml Ground Cumin |
| 1 1/2 tsp / 7 ml Ground Coriander |
| 1 tsp / 5 ml Freshly Ground Pepper |
| 1 tsp / 5 ml Ground Cardamom |
| 1 tsp / 5 ml Salt |
| 1/2 tsp / 2 ml Ground Cloves |
| 1/2 tsp / 2ml Cinnamon |
| 1/2 tsp / 2ml Garlic Powder |
METHOD:
- Preheat barbecue, then turn off one side and reduce heat to medium on other side. Combine rub ingredients.
- Prepare chicken by removing and discarding giblets and any excess fat. Rinse chicken inside and out with cold water, and pat dry with paper towels. Lightly coat chicken cavity and skin with cooking spray. Season chicken all over, inside and out with spice rub.
- Open the can of beer and pour out half. Set can on a flat surface and slide the chicken over the top, so that the can fits inside the cavity. Place chicken on a disposable foil pie plate and place on the side of the grill that the burners are off, keeping the can upright. Grill over indirect medium heat until juices run clear, and the wing pulls away easily, about 1 1/4 to 1 1/2 hours.
- With barbecue mitts or large tongs, carefully remove chicken and beer can from grill. Let rest 10-15 minutes before removing the can and cutting into serving pieces.
